In contrast to slow freezing, shock freezing transforms the liquid part of the food into microcrystals, which do not damage the tissue structure. This keeps them fresh, unchanged in taste and preserves them without any loss of quality. Save time and money by preparing and preserving large quantities and reducing raw material costs.
